Healthy, Easy Blueberry and Banana Pancakes
Hello! A slightly different one from me today but I thought I'd post a little recipe that I've been making and loving over the past few weeks. Quite a few people on my Instagram (@emshelx) have asked for this recipe so I thought I'd write it down for you. This is a little adaptation of my 3 ingredient healthy cookies recipe and they got such lovely feedback so thank you! I figured because Christmas is coming (scary) we're all going to want to hopefully get fit and healthy before we indulge in lots of yummy chocolate and wine. I found this recipe on Pinterest and have adapted it so I hope you like it! 
Healthy, Easy Blueberry and Banana PancakesThis is literally the easiest recipe ever. I absolutely adore pancakes but I rarely have flour in my apartment but these are easy, cheap, cheat pancakes but I think they taste just as yummy. For these all you need is:

- 2x eggs
- 2x banana (and extra for the topping if you wish)
- Blueberries (however many you want, I tend to put a cup in)
- Oats (generally 2-3 cups full)
- Milk
- Greek yogurt if you wish - Total Greek is my favourite! 
- Any toppings you fancy (keep it healthy)

Grab a bowl and mash up your bananas, once mashed, add in your oats, a handful of blueberries, two eggs and then mix. Once it's mixed - don't worry, it will look lumpy (add extra milk or a drop of Greek yoghurt if you want it to be less clunky) it should be quite chunky and a little bit liquidy. Just add extra milk to make it more liquidy - you'll be able to tell when it looks right. It shouldn't look like pancake mix, it should kind of look like a chunky mix which will pour but in a chunky way (you'll see what I mean when you do it yourself!)


Pour your mixture into a pan, I find it works best when the pan is really hot, I heat my pan up to the highest setting and spray a little bit of oil in the pan so that they don't stick. I've tried to make big thin pancakes with this recipe but it works best if you make little fat pancakes. 

Pour a blob of the mixture onto the boiling pan, leave for about 1 minute (it depends on the heat of your pan) and then grab a spatula underneath the pancake and flip it over gently. You'll be able to tell when they're cooked. I usually throw mine into the pan when it's sizzling but after about 30 seconds it's best to move it down to a medium heat. They don't need long at all. I personally love to have the blueberries in the middle but you can just do it with bananas if you prefer, blueberries tend to be really expensive so I've been buying frozen ones - I always thought they'd lose their nutritional benefits but you can find out more information about freeze-drying - frozen fruit has saved me a lot of money this past month!

They have no sugar in them but the fruit should make them sweet enough, for some people, they're probably quite bland so I like to dunk them in home-made healthy jam or yoghurt and then put some fresh lemon juice and more fruit on top. This is a super healthy, easy way to start your day and I just can't get enough. They feel so naughty but they taste so good, even my boyfriend approves (and he doesn't do healthy food!)
