Healthy Sweet Potato Superfood Brownies Recipe; Deliciously Ella

Hello hello, you found my oldest recipe ever! 

I am very very excited to share my new fave healthy yet delicious treat with you - it would be rude not to share this recipe to be honest! This is a really quick and easy but stupidly delicious recipe - if you love chocolate and brownies then hello, take note! I can't actually believe this is good for you. I haven't stopped eating these (it's dangerous because I eat a full batch at a time because they taste so good) but the good thing is, these are healthy brownies so feel free to eat a full batch haha! I tweeted (@emshelx) to say that I'd made these and lots of you asked for the recipe so here we go... (this recipe is another inspired from the Deliciously Ella book by the way but you can adapt it to your liking!)

You will need:

- 2 Medium-Large Sweet Potatoes 
- 4 Tablespoons of Raw Cacao Powder - linking my fave 
2/3 Mug Ground Almonds (80g) - Ground Almonds - can substitute if you don't have them 
- 1/2 Mug Buckwheat Flour or Brown Rice Flour (100g) - oat flour works well too 
- 14 Medjool Dates, Pitted
- Raisins 
- 3 Tablespoons Of Maple Syrup 
- Pinch Of Salt
- Dark chocolate or choc chips, depends how much you want to add in 

- Pre-heat the over to 180c (160c fan)

The above are all things I have in my cupboard nowadays as you can literally use them for pretty much every healthy recipe so it's worth buying them in bulk for these healthy recipes!


Deliciously Ella Sweet Potato Brownies

First, chop up your sweet potatoes and either boil them or put them in a microwave until they go soft


Put them in a blender with the pitted dates (I use a little hand blender! - My saviour) and blend until a smooth creamy mix forms. 





Put everything else in a bowl and mix in the sweet potato/date mixture too. 



 Mix everything together really well - you can add some melted chocolate here if you want them to be super chocolatey but you don't need to, up to you and how healthy you're trying to keep it.

Place the mix in a baking tray and cook for about 20-30 minutes - you should be able to pierce a fork into it and bring it out dry.
