Carbs get a bad rep. They really shouldn’t, we need carbs for energy. I once tried to give up carbs and it was the worst few days of my life, I had no fuel whatsoever. Life is about balance and carbs are part of a healthy diet, don’t let anyone tell you they’re not! As long as you’re eating the right carbs, you’re fine! I stick to wholewheat pasta and wholewheat rice where possible and I tend to avoid refined sugars, I also don’t eat white bread unless it’s fresh but I live by the 80/20 rule so on weekends, I’ll have some wine, pizza and Pringles because hey, why not. If you deprive yourself, you’ll only binge. Let’s talk about potatoes then, potatoes are completely natural, grown in the ground and you know what they say; if you can pick it or kill it, it’s good to eat (aka, natural things). Potatoes are a source of fibre, potassium and magnesium so they really deserve to be shouted about a little bit more. I love nothing more than a crispy jacket potato filled with protein rich tuna! Today, I wanted to show you one of my favourite potato recipes, showing you that carbs can be enjoyed as part of a healthy balanced diet!
This recipe will serve four people.
You will need:
- 4-5 potatoes depending on size, I go for small-medium sized ones because they boil quicker.
- a large handful of kale
- a large handful of spinach
- 2x red onions
- carrots (optional)
- spring onion (optional)
- 1 cup quinoa (dry)
- coconut oil or 1 cal spray
- chili
- salt
- pepper
- paprika
- 2x eggs
- tzatziki
Peel your potatoes and then chop them into small even sized chunks and then pop them in a pan for 15-20 minutes whilst they boil away. The potatoes will soon be ready to mash.
Whilst the potatoes are cooking, cook your quinoa on the hob too. Around 1 cup should do it, remember, quinoa grows so you don’t actually need too much.
Chop your veggies whilst this all cooks. This is where you can add your own twist, I recommend adding grated carrot, kale, spinach, spring onion and red onion for a lovely, crunchy meal full of good vegetables.
Mash your potatoes and then add in two eggs, all your vegetables and the quinoa. Add some chili, paprika and salt and pepper in here too. Mix it all together.
Put some coconut oil or 1 cal spray in a frying pan and then put a large spoonful of the mixture onto the pan, flatten it down so it’s like a patty. Fry on each side on a high heat for around 2 minutes, until you can get a spatula underneath and move it to flip it. It should stick together into a perfect little patty.
Alternatively, you can oven bake but I like the crispness! I always make too much mixture when it comes to making fritters but that’s no issue, put it in the fridge and you can make some more the following day! This recipe really is great because it's adaptable, feel free to bake, fry for as long as you want or add whatever veggies you fancy. You can get creative and super healthy with this, just use quinoa and mashed potatoes as the base! Tada!
