A Picnic In The Park; Favourite Healthy Picnic Foods

I am obsessed with picnics. Give me Summer weather and the first thing that springs to mind is a picnic or a BBQ and typically, as I post this, it's currently raining in the UK. The British weather seriously needs to make it's mind up! Luckily, last week the weather was perfect and I totally took advantage of it. I love nothing more than yummy nibbles which is probably why I adore picnics so much, I love grazing and tapas style food. Me and Matt went for a picnic in my local park before a game of tennis so I thought I’d take you along with me. I avoided the stodgy picnic items, sorry Pringles and sausage rolls and instead, had a healthy picnic. I’m quite pleased with how it turned out and we had a lovely evening! Hopefully it’ll give you some ideas to keep your picnic healthy!




Ready and raring to go in my gym kit, I wore myNike trainers from JD and an All Saints tee. Ready for Matt to kick my butt at tennis.





I prepped some mushroom bruschettas before I left, they taste really good warm but are obviously quite hard to transport in a picnic basket so I’d definitely recommend having these at home in the garden! The park we went to was about 30 minutes away, you could always take a little disposable BBQ with you and grill them on there. Yummy. Bruschetta is like my favourite party recipe, I always whip it up. They’re so easy to make! Pop some coconut oil in a pan, gently fry your mushrooms, onion and tomatoes together (you really can add anything to these bruschettas but these are my three favourite, easy options!) and then grill some bread and you’re ready to eat. Throw some feta over the top for good measure. I told you it was simple but they're definitely yummier when they're hot! Mushrooms include vitamins, are a good source of protein and are low in fat. They also count as one of your 5-a-day and that's why I throw them into pretty much everything, Summer and Winter!

Sticking to the mushroom theme - I’ve always adored mushrooms, I also made some kebabs. I love vegetable kebabs, we took them raw ready to BBQ on a disposable BBQ but you could grill/fry them before hand if you're just eating them in the garden. I personally think these work best freshly hot off the BBQ. They taste amazing on a BBQ as the mozzarella melts and goes all gooey and delicious with the mushrooms. Again, super simple, grab some skewers and put a blob of mozzarella, then a mushroom and then a cherry tomato on. Grill them for 5 minutes and you’re ready to eat. Mushrooms are so versatile, healthy and delicious. There are no rules with these bruschettas or kebabs, you can be as creative and as healthy with them as you wish! Mushrooms can be easily included in summer recipes and can be part of tasty, affordable home cooking. I always end up spending so much money on picnics because I buy everything ready made which is why this time, to keep costs down, I bought most of the ingredients for the things I made. I kind of wanted to make my healthy pizzas using mushrooms too but just didn’t have the time to make them as well! Make sure you check that recipe out though because they're delicious, mushrooms, pesto and mozzarella together = the best combo. 

We sat and watched as people played on the grass. 




It wouldn't be a picnic without dessert would it?





I took strawberries to dunk in dark chocolate (80% is good for you!) 



I crumbled and couldn't resist some naughty Twirl bites. Blame Matt, they're his favourite.





I grabbed my bottle of Fiji water ready for the game ahead. I've become obsessed with playing tennis on light Summer evenings. 



I did this picnic for two people but as you can see, we had way too many things to eat!  Nothing beats warm, light nights, nibbling and chatting away and then finished with a game of tennis!
