Easy, Healthy, 3 Ingredient Vegan Dairy Free Pancakes Recipe

Hello hello hello! If you didn't already know, I love making pancakes. I pretty much live on them. I personally don't think we need pancake day as an excuse to eat pancakes, but with it being so close, I thought I'd share my current favourite pancake recipe. These pancakes are vegan and dairy free too. I don't think pancakes are unhealthy, these ones certainly aren't anyway. Whether you're having them for breakfast, brunch or dessert, I hope you enjoy these as much as I do, these are so easy to make too, there's really no excuse plus, they're entirely guilt free!

Main ingredients:

Bananas (I use 2) - A lot of people don't like bananas so if you eat eggs, put eggs in them instead to make the mixture stick.
Oats - I use gluten free ones
Almond milk if Vegan but any milk will do

Optional:

Raw cacao
Baking power 
Blueberries
Honey 
Chia seeds
Fresh lemon juice
Cinnamon

Method:

Add the oats, mashed bananas, milk and a pinch of baking powder into a bowl.
See my video to see amounts and consistency but it's easy once you see the video and see what it's supposed to look like.

Once it's the right thickness (think gooey so it would take a while to drop off the spoon, it should be quite thick), feel free to add any extras, you can put blueberries (they taste delicious when they go all hot and gooey), chia seeds, raw cacao, honey, cinnamon and whatever you like inside the actual mixture to add more superfood goodness or you can just leave them plain. This works out better if you use a hand blender to make it into a better consistency but at University I just used to mix it up.

Heat a pan up and make sure it's really hot, I then use a spray on low calorie spray (you can get coconut oil or olive oil) as I find this spray works best with pancakes. Then make a small but thick patty with the mixture. Leave it until it browns on one side and then flip it so they cook all the way through.

Toppings: The toppings are what make pancakes so great! I like to top them with a drizzle of honey (obviously if you're Vegan change this for something else) you can use maple syrup, blueberries, lemon juice.

My favourite pancakes are the exact recipe as seen here, but with blueberries inside the mixture, topped with cinnamon, fresh lemon juice and extra berries on top. This isn't your traditional crepe like pancake recipe (I do have a recipe for that if anyones interested) but this is an incredibly filling, delicious, guilt-free pancake recipe and I hope you love it as much as I do.
