First things first, to make the Mojito superfood juice you will need:
Squeeze of Lime
Handful of Blueberries
1x Banana
Splash of still lemonade with fresh lemon (no added sugar version)
Coconut water
Mint leaves
Spinach leaves
Chia seeds
Cinnamon
*I don't really do measurements, I just add a handful of everything in my smoothies, depending on how much or how little I want, it's one of those things that just needs to be tasted as you go.
The prep is ridiculously easy, start by chopping the banana and then add the blueberries, but I recommend chopping everything in advance and then putting it in the freezer, it means you can then grab a bag and make the smoothie quickly and easy every day without the need for chopping.
Now time for the secret ingredient, the mint. Mint is refreshing, delicious and adds a different but subtle kick. I'm working with Love Fresh Herbs this year to incorporate more fresh herbs into my recipes, they have loads of health benefits and they're so affordable too. Mint is one of the most popular and versatile herbs, it's cool and clean flavour does so much for both sweet and savory dishes, whether it's a fruit salad or in a mint sauce!
Once it’s all chopped up, put your mint leaves in, add a squeeze of lime, a dash of fresh lemonade, a little bit of coconut water for hydration (it completely depends on how much you want). Add chia seeds and a dash of cinnamon and then blend. This is probably the easiest smoothie you will ever make.
