Like most people I’m always super busy juggling life which can sometimes make preparing healthy meals a challenge. I’m always on the go and always hungry (queen of hanger) I’m a real snacker and I’m always trying different things to make in abundance that I can snack on secure in the knowledge that what I am putting into my mouth both satisfies my appetite and is good for me. Here’s one thing I found ticks all the boxes recently (nb I’m not a fan of measuring as you will see) but this is quick, easy to make and it's good for you too. Sign me up for a lifetime supply.

You will need:
Dates
Chia seeds
Figs
Honey (or alternative if vegan)
Cinnamon
Oats
- Put 10 dates in a bowl and cover with boiled water to soften them.
- Add a small handful of chia seeds so that they congeal
- Chop up 4 soft figs and throw them into the mix (great for extra fibre)
- Once all the ingredients are soft whisk them with a hand blender
- Mix the wet ingredients into two cups of oats
- Drizzle 2 tablespoons of honey and mix all the ingredients together
- Throw in a tablespoon of ground cinnamon
- At this stage, if the mixture is too runny, add a few more oats and if it is too firm add a little boiled water to loosen it
- Line a baking tray with some baking parchment and rub over a minimal amount of oil just to lightly grease it
- With either clean hands or a spoon split the ingredients (should make about 10) and flatten each one on to the baking tray so they look like cookies
Shop baking items below:
- Bake in a pre-heated oven (fan 160 degrees)
- Once they look firm and nicely browned, take them out of the oven and place on a rack or similar to cool
- Once these are cooked, as an extra special treat you can break up some dark chocolate and mix it with a little almond milk or dunk it into my healthy chocolate spread recipe (it's delicious!!!)
- Pop these ingredients into a dish and warm for 30 - 40 seconds in a microwave (or as long as you need to melt it based on your equipment)
Dunk one of the cookies in the melted chocolate (go for 90% dark if you're trying to be healthier) and enjoy. Save the rest until you feel peckish!!
