I just love this time of year, the start of the year (although, how is it March already?!) thinking of new goals, new beginnings and finally the weather is getting a little bit nicer too. I love the thought of spring being just around the corner and I’m particularly looking forward to it this year following my move to London late last year. I adore nothing more than early mornings that are light and as I am doing lots of walking (to both save travel costs and to keep my fitness up) I literally can’t wait until it’s light at the crack of dawn! Talking about mornings, I’ve been brought up to believe that I should never, ever start the day on an empty stomach (which is really good because I always wake up starving!). I know many of you find my recipe blog posts helpful so I thought I’d use this post to share three of my favourite breakfast recipes. They’re healthy and nutritious and also really easy to pull together. I’m not one for measuring and spending ages messing about so you will always find what I cook easy peasy. Let's go!
PORRIDGE
A good old fashioned bowl of porridge is a great way to start the day. I didn’t realise until recently but porridge is packed with protein which is great because your body uses protein to build and repair tissues in your body. It also takes a while to digest so keeps you full for a good while. The great thing about porridge is that it’s so versatile - I go from literally just warming my oats with warm almond milk (Innocent almond milk is my favourite right now) and eating them plain to really jazzing them up with raw cocoa, blueberries, raspberries, bananas and a sprinkling of seeds.
Straight up:
Half fill a bowl with oats (or more if you like), bring some almond milk (or milk of your choice) to the boil and mix in to the oats very well, leaving it to soak in for a while to make the oats soft and gooey.
Baked:
When I lived in Canada I had baked oats every single morning, probably because it was always so cold! I'd make my cold oat mixture (oats, blueberries, banana, raw cacao and whatever else I fancied) and then I'd put it in an oven dish and let it bake for 10-20 mins whilst I was in the shower. I came out to a delicious, baked bowl of oats. Thank me later.
Baked:

Jazzed up:
Half fill a bowl with oats, add two teaspoons of raw natural cacao and stir in milk of your choice (make it quite milky). Add a sliced banana and put the mixture in a microwave for 3 mins until nice and hot. Remove the mixture from the microwave and add any toppings of your choice. I love fresh fruit, coconut flakes, cinnamon and ground nuts. You can even add carrot to make more of a carrot cake porridge! You can read my healthy banoffee oats recipe.
Overnight:
If you don’t mind your oats cold then try making them the night before. Overnight oats are just divine, so soft and creamy. Literally mix a bowl of oats with milk of your choice, some yummy fruit and place in the fridge overnight. Overnight, the ingredients sink into the porridge and you wake up to a flavoursome bowl of goodness. For extra yumminess, the next morning top with greek yogurt!
BANANAS ON TOAST
When I was little my Mum sometimes gave us banana sandwiches and I’m sure that this is where my love of this recipe comes from:
Toast some bread of your choice. I usually use sourdough because 1. It’s apparently better for my digestion and means that my stomach doesn’t bloat as much and 2. I absolutely love how chewy it is!
Top the toast with some nut butter of your choice (I use almond, the almond and coconut butter by Meridian is honestly one of the best I've ever tasted, I buy it all the time).
Add a sliced banana.
I love pancakes and on pancake day I pack quite a few in, okay, who am I kidding... I pack quite a few in most days of the week haha. As a healthier alternative I use this recipe which never lets me down and tastes just as good. Nutritious, nice and filling too.
Mash two very ripe bananas
Add 3 tablespoons of buckwheat flour (or similar/oats work really well)
Mix in enough almond milk/milk of your choice to make the batter creamy, smooth and thick enough to drop in small dollops in to a pan. Here you can add raw cacao, honey, blueberries and cinnamon if you like or just keep it simple.
Warm some olive oil in a pan
Put a very well heaped tablespoon of the mixture in to the pan and press down to make a pancake
Repeat, fitting as many as your pan will take
Cook them until they are golden brown and then turn over and do the same again
Meanwhile, heat some frozen fruit with some honey and a drop of water gently in a sauce pan
Leave it simmering until it is nice and gooey
Once ready, assemble the pancakes how you like and then pour over the fruit compote
Add some greek yogurt if you like
