Healthy Easy Chocolate Chip Cookie Recipe

If you guys follow me on Instagram you’ll probably be sick of me constantly whipping up my new 'healthier' chocolate chip cookie recipe haha, but they’re just SO good, Matt's requesting them every night! I’ve had so many messages asking for the recipe so decided today to finally share it. I love making healthy, easy cookies as I can eat them for breakfast, dessert or just snack on them so here is my super easy, chocolate chip cookie recipe.

These aren’t as healthy as my vegan cookies, head here for my healthy fig and oat vegan cookie recipe or here for my healthy carrot cake cookie recipe or here for my ginger, fig and oat recipe. But they are still healthier than your average choc chip cookie (you can always swap out the choc chips for blueberries too if you wanna be healthier). Unfortunately these ones aren’t vegan, but, they’re delicious!

YOU WILL NEED (makes round 10 cookies):  - Ad affiliate 

- 2 large cups oats
- 1 cup buckwheat flour
(It should be 70% oats and 30% buckwheat flour)
- 2x Eggs
- Chocolate chips (dark to make it healthier... hello antioxidants but they obviously taste nicer with milk chocolate haha, I just use normal baking chips but you could always use a vegan refined sugar free chocolate such as Ombar instead)
- Honey (I use Manuka Dr honey) 
- Vanilla essence
- Cinnamon

Method:

- Pour your oats and flour into a mixing bowl, it sound be around 70% oats to 30% flour. Too much buckwheat makes them taste like cardboard haha.

- Put the eggs in a bowl with a spoonful of honey (I use a small spoon but add more depending on sweetness), a drop of vanilla essence and a spoonful of cinnamon. Whip it all together.

- Add your egg mixture to your oats.

- Add your chocolate chips and mix

- You should be able to mix the dry ingredients in without any water or without any milk until it makes a cookie mixture. The only liquid you need is the eggs and a bit of honey.



- Spoon it up onto a greaseproof lined tray and pop in the oven, I usually do 250 degrees for 17 minutes until they’re crispy.


They taste best straight out of the oven! See how long they last you!
