I'm sure you're all very aware that I love healthy baking (okay and indulgent baking too but I prefer to share my healthy recipes with you hehe) maybe you've tried my healthy, easy banana bread recipe or my healthier chocolate chip cookie recipe and I know lots of you have tried my 3 ingredient vegan pancake recipe! Whatever you've tried (or haven't tried) today I wanted to write up the recipe for my healthy oaty flapjack style recipe. I've never had so many messages on Instagram (@emshelx) asking me to write up a recipe... it seems this soft, oaty bar of deliciousness has got us all excited! The thing is, with my baking, I never weigh things, I just throw them in hehe! I hope you enjoy these healthier flapjacks as much as I do!

You will need:
2 bananas (the riper the better)
2 large cups of oats
2 tablespoons of honey
1 egg (or substitute for a chia egg if vegan)
2 tablespoons of desiccated coconut
2 tablespoons of ground almond
A handful of sultanas or cranberries dried (I prefer this with sultanas, throw in as many as you wish)
A handful of ground nuts (optional)
Milk of your choice (I use almond)

Mix everything together in a mixing bowl with a big spoon. I like to make things easy so just throw them all in. Add enough milk to make it into something that makes it not too sloppy and not too firm, it depends how much mixture you've got, have a look above for how I make mine look.
Spread the mixture on to a lined baking tray or a baking dish (I like to make mine into squares) and bake until nice and golden in a pre heated oven (160 degrees). I find around 17-20 minutes is perfect for this.
Remove and enjoy.
